Generously thick cuts of prime salted tongue and standard salted tongue are seasoned simply with salt rather than heavy marinades, bringing out the cut's natural depth of flavor and crisp, tender bite. Diners will also find an array of classic beef cuts balancing rich lean meat with sweet marbling, including domestic beef skirt steak (harami), Kuroge Washu prime kalbi, and Kuroge Washu prime loin.

When deciding among cuts, the daily curated 5-variety platter—built around blackboard specials—and assorted platters spanning red meat to offal make reliable choices. The offal selection is especially varied. Beyond the appeal of searing pieces until crisp and aromatic on the outside, guests can explore contrasting textures such as crunchy urute cartilage, chewy special mino (rumen), and rich akasen (stomach 4) by tailoring a custom platter with their choice of 4 different cuts.
